TOP chefs will be demonstrating how to make dishes for all the family at the eat: Wellington Food and Drink Festival.

The event on Saturday, September 1, will showcase more than 80 local food and drink producers, alongside lots of free entertainment.

Chefs and cooks will be making dishes families can make at home on the demonstration stage at the Quaker Meeting House with large screens to help visitors see what is going on.

Local community group Transition Town Wellington, the group behind a new foraging map, gets proceedings under way at 11am. Members will be using some seasonal produce to demonstrate how to preserve and serve free local food.

Steve Fowell, School Chef of the Year South-West 2017, will be showing how to create inspiring food for just over £1 a portion at 1pm.

He wants to reignite a passion for cooking with the family and in a fast-paced demonstration will make Somerset pork medallions with a broad bean and mushroom fricasse, and crushed new potatoes.

He said: "I am really excited about returning to Wellington - I love to see the audience there who are always so enthusiastic."

Bini Ludlow, the woman behind the multi award-winning Bini Fine Foods, is appearing at 3pm. She cooks authentic Indian food made in Somerset but inspired by India.

"I love sharing my passion for cooking, flavours and subtle spicing that bring the dishes to life," she said. "I will be cooking vegetable bhajya – bhajis – and Indian omelette, perfect for a mid-morning snack, and channa chaat - a chickpea and potato street food dish – served with tamarind chutney and yogurt. A perfect sharing dish."

Chrissie Godfrey, of vegetarian/vegan restaurant Delicious in Taunton, is hosting the Hawksmoor Cookery School outside the Conservative Club. She will be leading a hands-on workshop for visitors to make their own sushi.

She said: "You will be using nori sheets, cooked and prepared sushi rice, and a choice of vegetables, making your own maki roll with a soy and ginger dipping sauce - all lovely and sticky and fun.

"Then you will be making gram flour pancakes – preparing your choice of finely diced vegetables, frying a chickpea batter pancake with the vegetables mixed in, while making a tomato, coriander and lime salsa."

Visitors will have lots of opportunity to taste, adjust, share and discuss, and all the recipes will be available to take home.

The classes are suitable for adults and families with children aged eight-plus. Visitors can drop in between 10.30am-12.30pm, and 1.30-3.30pm to have a go.

The eat: Wellington Food and Drink Festival opens at 10am and trades through to 4pm.
